Mycodérma Pers. (Kahmpilz), Pilzgattung von zweifelhafter Verwandtschaft, von manchen Forschern zu den Hefepilzen gestellt, hefenartig sprossende, ovale bis zylindrische, zu reichverzweigten Zellenreihen verbundene Zellen, die eine farblose Haut (Kahmhaut) auf der Oberfläche vergorner und halbvergorner Flüssigkeiten bilden. M. vini Desm. (Weinkahmpilz) und M. cerevisiae Desm. (Bierkahmpilz, Saccharomyces Mycoderma Rees) bilden eine zarte, weiße oder gelblichweiße, sogen. Kahmhaut auf Wein und Bier. Die Zellen sind 0,006–0,007 mm lang, 0,002–0,003 mm breit. Sie wirken nicht als Fermente, sondern als Verwesungspitze, indem sie Sauerstoff auf Wein und Bier übertragen und das Verderben dieser Flüssigkeiten bedingen. Die angebliche Sporenbildung des Pilzes beruht nach Zopf auf einer Verwechselung der Sporen mit Fetttröpfchen. Die früher zu M. gestellte Essigmutter (M. aceti Pasteur, Ulvina aceti Ktz.). die ebenfalls als Kahmhaut auf gegornen Flüssigkeiten auftritt und den Alkohol zu Essigsäure und Wasser oxydiert, gehört als Bacillus aceti Ktz. zu den Spaltpilzen.
